When someone asks me, "What quick healthy breakfast should I eat when I'm busy or on the go?" This is my answer! It's honestly the best creation (no props to me)...creator whoever you are! Throw some oats, chia seeds and a milk like substance in a mason jar and put it in the fridge. In the morning its ready to eat! I usually add any other nuts I have, hemp seeds, flaxseed meal, nut butter, fruit. Why not just make the oatmeal in the morning? Nutritionally speaking, we can actually digest oats better when they are soaked. Oats are so hearty that when they have time to soak (basically long form cooking), the starches break down and in turn our stomachs are much happier.
Here I added yogurt in the morning and layered it with the oats. Oats are super healthy with tons of manganese, B vitamins, zinc, magnesium, protein, fiber. And chia seeds are the queen of antioxidants, fiber, protein and omega 3 fatty acids. Try this super powered breakfast people!
1/3 cup regular oats
1 cup almond milk, hemp, coconut or regular
*add more if prefer thinner consistency
1-2 tablespoons chia seeds
1-2 tsp maple syrup (optional)
1/4 teaspoon pure vanilla extract (optional)
1-2 tsp hemp seeds or flaxseeds (optional)
1. Mix together the above ingredients in a mason jar or bowl, cover and place in fridge overnight. Add fruit and/or yogurt in the morning and its ready to eat!
