I've been hearing a lot about how delicious cashew cheese is, so I had to give it a go. It has the consistency of hummus, not quite cheese, and a very different taste. That said,I loved the unique flavor. It's great with blended tomatoes and olives and you can be creative in coming up with new flavors! It can be added to anything from salads to avocado toast!
1 cup raw cashews (best results soaked for 1 hr or more)
¼ cup water
¼ cup nutritional yeast
2 Tbs. lemon juice
2 cloves garlic
1 Tbs. raw apple cider vinegar
1 Tbs. dijon mustard
1 tsp flaxseed meal
Salt and pepper to taste
Sun dried tomato spread - add ½ cup sun-dried tomatoes, chopped
Olive spread- add ⅓ cup green and/or kalamata olives, chopped
- Simply add all ingredients into your high speed blender and blend until thick and creamy.
- If desire, add the noted ingredients to make each cashew cheese listed.
- The consistency will be come thicker after it's been chilled.
- Store in the refrigerator for up to 5 days.
