My dream come true! Boy do I wish these were around in my childhood as I definitely ate pounds of raw cookie dough (the bad kind). These raw (good kind) of cookie dough bites are super addicting! Perfect combo! These kind of treats are really popular right now, and for good reason! If you like this kinda thing, I promise you'll be making them often! Contains protein, fiber, healthy fats, omega 3 fatty acids and antioxidants, in a dessert!!
Makes 12 bites
1/2 cup raw cashews
1/2 cup almonds or almond meal
1 cup old-fashioned rolled oats
1/4 tsp salt
3-4 Tbsp maple syrup
2 Tbsp melted coconut oil
1 Tbsp of a creamy nut butter
2 tsp vanilla extract
1 tsp of chia seeds
1/4 cup chocolate chips (if you're vegan-use carob chips or cacao nibs)
*if you have flaxseed meal or seeds, add 1 tsp for some added omega 3's
- Line a plate or container with parchment paper and set it aside. Combine the cashews, almonds, oats and salt in a food processor. Pulse together until a fine meal forms. Be careful not to over-process and end up with cashew butter.
- Add the maple syrup, coconut oil and the vanilla extract to the oat mixture. Pulse again until the mixture comes together in a ball of raw dough.
- Remove the ball of dough from the food processor and place it in a small bowl. Fold in the chocolate chips so they are incorporated throughout the dough mixture.
- Portion out the dough into twelve even balls (or more if you'd prefer them smaller). Place your completed bites onto the paper or container. You can eat them right away, or store them in the freezer for later. They are good a little cold too!
